You need to open the WTF map, change the accountname, the server name, and the char for it to work. If you don't do that, you won't see any profiles. There's two different levels of saved variables. There's one that is contained within the character and then there is one that is account wide that is at the same level as the serve...

I will second that, it looks like when you scrubbed the WTF that you took out the SavedVariables folder that is at the same level as the ACCOUNTNAME folder. It exists in the 16:9 UI download but not in the 21:9 one.
