Here is an addon that lets you customize it quickly and easily.

Features
This Ace2 AddOn simply manipulates the RAID_CLASS_COLORS array allowing you to customize the display color of every class in any mod that makes use of the defines.

Notes
Simply /classcolors config (or /cc config) to pop up a menu providing a color wheel of selecting your favorite color.

This addon is great, but there's one problem. It loads after other addons, making it so the color change doesn't occur on all of them. This should be easy to fix though.

I actually wrote a small addon to do this for myself but having color pickers for it is nicer. A lot of addons already pull their color from the raid class color element. Unfortunately I found that some of the addons I use instead define their own colors. Presumably to be able to have them slightly darker or something but it is inconvenient to say the least. AG_UnitFrames for example pulls raid colors for bars but not for names so I had to edit the mod itself to make it pull from raid colors. Hopefully now that a simple picker like this is out more raid authors will use the table of colors as you would hope.

If I'm reading this correctly, this mod by itself doesn't do anything on it's own correct?
Do you have any sort of list of mods that use the RaidClass element you mentioned?

Hopefully I'll see !Chatbox listed on there as it used to color names in chat based on class but that seems to have been broken in 2.0 oh well was hoping this would replace it.
